Japanese food culture isn’t just about what you grab at big cities.

Spanning from the North to the South, Japan’s diverse climates give rise to a rich tapestry of culinary traditions. Take soy sauce, for instance—it’s not just one flavor. In Nagano, it tastes a predominantly salty profile, while in Kyushu, you will find more sweetness than saltiness. This diversity isn’t limited to soy sauces, Japanese cuisine is a world waiting to be explored by region.

My cooking class is focused on Nagano’s culinary tradition which people still eat in every day bases. Ingredients and cooking methods are very unique and it is inherited for a long time. In other words, the tradition is very healthy and nature-oriented.

It is held at a private kitchen in Wachigai, a Japanese restaurant in Omachi, Nagano, where 1 hour away from Nagano station. This enchanting house is in a meticulously preserved structure that boasts over 130 years of history. Step inside, and you’ll be transported back in time, surrounded by the captivating beauty of its ancient interior design.

Local Cuisine Course

This course introduces you to Nagano’s distinctive food culture, shaped by local ingredients. You’ll also learn how to make Japanese ‘Dashi’ broth, perfect for cooking your own delicious Miso soup at home!

Temari Sushi Course

Temari Sushi is a type of round sushi that anyone can easily make, unlike the traditional sushi crafted by professional chefs. It’s colorful, cute (‘kawaii’), and you can decorate it as you like!
